Spinach Crust Pizza

A friend asked me the other day if I ever tried making a pizza crust with spinach.  It sounded like a good idea/challenge.  I gave it a try and seriously, it was good!

For those that watch carbs, you will be happy.  For those that cannot have gluten, you will be happy.  For those that think it will taste terrible, even you will be happy.  If not, let me know.

Here’s what I did…

Preheat oven to 425 degrees.

Into a food processor, add two cups of packed fresh spinach,

One egg

One cup of grated Parmesan cheese, Italian seasoning, salt and pepper.

Process a few seconds, just until combined.  (Do not pulse too much or you will have soup.)

Place a sheet of parchment paper on a baking sheet.  Scoop the spinach mixture onto the parchment paper.  Yes, this is your pizza “dough”.

Using a spatula, spread the spinach mixture into the shape of a pizza crust.  The crust should be about 1/4 inch thick.

Place the crust into the oven and bake for 17-20 minutes until the edges begin to brown.

Remove from the oven and cool for 5 minutes.

Spread pizza sauce over the crust.

Add your favorite toppings.

Place the pizza back in the oven for about 10-12 minutes until the cheese is melted.

Remove the pizza from the oven and let it rest for 5 minutes.

Slice and serve.

(Do not over pulse or mixture will be runny). Place a piece of parchment paper on a baking sheet. Scoop spinach mixture onto the parchment paper. Using a spatula, spread until crust is about 1/4 inch thick. Bake for 17-20 minutes until edges begin to brown. Remove crust and cool completely. Spread pizza sauce on the crust and place desired toppings on the pizza. Bake 10-12 minutes until cheese melts. Rest for 5 minutes. Slice and serve.
