Roasted Slaw

My friend, Ann, shared an idea with me the other day – Roasted Slaw.  I tried it and loved it.  It’s a quick side dish that has just the right amount of flavor and crunch.  A couple men in our house even liked it too!

Let’s get started…

Preheat oven to 425 degrees.

Place a 10 ounce bag of slaw mix (I used a combination of kale, brussels sprouts, broccoli, green and red cabbage) into a mixing bowl.

Add 3 tablespoons of olive oil and 1/2 teaspoon of sea salt.  Stir to evenly coat.

Spread the slaw mixture in a single layer on a large baking sheet that has been sprayed with cooking spray or olive oil.

Bake for 10 minutes, remove from the oven and stir.  Bake an additional 10 minutes and stir.  Bake an additional 5 minutes or until the vegetables begin to crisp.

Remove from the oven and serve.
