Mom’s Pumpkin Bars

When I think of Fall favorites, my Mom’s Pumpkin Bars immediately come to mind.  My recipe card is weathered which is a fond reminder of how many times over the years I have made these yummy Pumpkin Bars.

To this day, whenever I make them, they quickly disappear.  Like for example, over the weekend!  😋

Let’s get started…

Preheat oven to 350 degrees.

For the batter, place sugar, beaten eggs, pumpkin, and oil into a mixing bowl.  Mix on medium speed until well combined.  Add flour, baking powder, soda, cinnamon, and salt.  Mix on medium speed until smooth.

Pour the batter into a prepared baking sheet pan.

Bake for 22 minutes until an inserted toothpick comes out clean.  Remove from the oven and completely cool.

While the cake is cooling, let’s move on to the Butter Cream Cheese Frosting.

Cream together butter and cream cheese on high speed until smooth.  Add milk and vanilla.  Beat on medium speed.  Add powdered sugar and beat on high speed until creamy and smooth.

Frost the bars and watch them disappear.

  1. Preheat oven to 350 degrees. Spray a large sheet cake pan with cooking spray. Set aside. In a mixing bowl, combine sugar, beaten eggs, pumpkin, and oil. Beat on medium speed until smooth. On low speed, mix in flour, baking powder, soda, cinnamon, and salt. Continue to mix until smooth. Pour batter into a prepared sheet cake pan. Bake for 22 minutes until an inserted toothpick comes out clean. Allow cake to completely cool and then frost.
Butter Cream Cheese Frosting
  1. In a mixing bowl, on medium high speed, mix together Cream Cheese and butter until smooth. Add milk and vanilla and mix until combined. Add powdered sugar and mix on high until smooth and creamy. Add additional milk or powdered sugar for desired consistency.
