Belgian Endive, Bacon and Blue Cheese Salad

I picked up some Belgian Endive in the grocery store and decided to make a hearty salad.

Let’s start with a basic Blue Cheese Dressing.

Mix together 1/2 cup mayonnaise and 1/2 cup sour cream.

Stir in; 1/8 tsp. seasoned salt, 1/8 tsp. fresh ground black pepper, a splash of Worcestershire Sauce and a splash of Tabasco.

Gently fold in 1/4 cup crumbled blue cheese and set dressing aside.  (add a little milk, buttermilk or cream to the dressing if you prefer a thinner consistency)

 Thoroughly rinse the Belgian Endive and cut off the base of each head.

Rinse a few cherry or grape tomatoes of any size or color.

Grab some thick cut bacon.

Slice 3-4 pieces into one inch strips.

Fry the bacon

until it is lightly crisp.

To assemble the salad; place one Belgian Endive on a serving plate, top with cherry tomatoes, cooked bacon, desired amount of dressing, a few blue cheese crumbles and chopped parsley or chives for garnish.  Enjoy!

  1. Assemble dressing; stir together mayonnaise and sour cream. Mix in; seasoned salt, pepper, Worcestershire sauce, tabasco sauce. Gently fold in blue cheese crumbles. Set aside. To assemble salad; place one endive on each serving plate, cherry tomatoes, fried bacon pieces, desired amount of dressing, blue cheese crumbles and freshly chopped herb of choice.
